This is one of my favorite recipes, and if you are a potsie and need extra salt, this is the key to both your health and your happiness. I found this recipe a year ago on layersofhappiness.com and I’m so glad I did.
I will caution that it is not an ‘easy’ recipe in terms of kitchen manual labor. If you’re having a bad day with extremity pain and fatigue, this isn’t the recipe for that day. In fact I made them today but I had cautioned everyone beforehand that if I was not having a good day they would not be happening. There is plenty of peeling and slicing which can suck up your energy quickly.
Make sure you have a stool or a chair in the kitchen too, or else your good day will soon be a bad day!
There aren’t many ingredients necessary to make these delicious crispy fries. I made this infographic to break it down step-by-step. While they do take some time to make, they are definitely worth it and a thousand times better than throwing frozen fries in the oven.
Going to try these tomorrow. Have had a couple of particularly bad days at end of my holiday as it has been hot here, so my daughter stopped my wheelchair outside a butchers and reappeared with pork scratchings. Not to be recommended as a regular low salt remedy, but they did work a treat!! x

I’m sorry you’ve had some rough days. The heat is hard! You’ll enjoy these fries and you can add as much salt as you need!

I’m blown away by the computer skills. Very professional. Also fries look great….my potato skins stay on the potatoes as God intended, will this recipe still work?

Hmmm…. I bet it will. I’ve never tried leaving the skin on!

I feel like yes, but to be honest I’ve never tried. I’m guessing they would still be delicious though!
