This takes less than 30 minutes to throw together and 20 of it is just simmering. This also only gets one pot and one utensil dirty. I hate when recipes make you dirty up 4 bowls and every measuring cup in the kitchen.
The only actual effort for this is browning the meat, which can be done sitting on your handy dandy kitchen stool. The other part that can be tricky is opening the cans. If you have a lovely kitchen assistant, this is a great helper task. If you don’t, I suggest you invest the 20 dollars in something similar to this. It will make your cooking experience a lot easier and much less fatiguing.
Anyways, onto the delicious recipe! I found this recipe on the Baked in Arizona website, although I have made a few changes to the recipe.
1 pound ground beef (I use ground turkey breast since it’s lower in fat and cholesterol)
2 cans (14.5 oz each) Mexican stewed tomatoes
1 can (15 oz) tomato sauce
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) navy beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 package (or 4 tablespoons) taco seasoning
**My Secret Ingredient** 1 package ranch dressing mix – adds a delicious flavor!
Brown the meat (since I use ground turkey breast I use a small amount of olive oil).
Add in everything else and stir. Simmer for 20 minutes over medium heat.
Garnish with cheddar cheese, tortilla chips, sour cream, sliced olives, jalapenos, cilantro, or whatever else you love!
Eat it and love it! Oh and guess what goes great with this? I bet MARGARITAS do… just a guess.
